Magnesium silicate, commercially known as filter powder or clarifying agent, has exerted a profound and multifaceted impact on the fried food industry, fundamentally shaping its operational economics, product quality, and even the ongoing discourse on food safety. Its primary function is to act as a physical filter aid in the process of cooking oil maintenance. During continuous high-temperature frying, cooking oils degrade through hydrolysis, oxidation, and polymerization, leading to the accumulation of polar compounds, free fatty acids (FFA), and food particulates like crumbs and batter.
